fried chicken is one of my favorite foods! (then again, ANYTHING fried could make it to my top favorite foods list)

Midnight Chef #2

this one's for you karl...

so...pretty basic, but to have the best southern style fried chicken (and yes, i qualify because i spent several days in north carolina!) you must use buttermilk buttermlik buttermilk...and lard!

won't get too detailed with the recipe but here's how i did it. take a whole chicken and dismember yourself...hehe...get it...dismember YOURSELF! or pre cut already.
add your favorite spices...
for this one, i used fresh parsley, onions, garlic, chili powder, tarragon, salt n peppa, super duper HOT sauce, buttermilk (organic and from a local farm...because there is nothing "good" about eating deep fried chicken so you might as well make it organic and support a local farm to make you feel a little bit good about yourself)

what else? ok, that's all. cover with saran wrap and let the marination begin overnight in the fridge.

next day, heat some oil (preferably peanut oil or other oil with a high smoke point), take pieces of chicken, shake off extra marination liquid, dip in a bowl with beated eggs, shake extra egg juice, and flour....and then....FRY!

YUMMY! i reckon this will be one of the best fried chicken ya'll ever had!

Neiman Marcus Cookies:
Ingredients

# 1/2 cup (1 stick) butter, softened
# 1 cup light brown sugar
# 3 tablespoons granulated sugar
# 1 large egg
# 2 teaspoons vanilla extract
# 1-3/4 cups all purpose flour
# 1/2 teaspoon baking powder
# 1/2 teaspoon baking soda
# 1/2 teaspoon salt
# 1-1/2 teaspoons instant espresso coffee powder
# 1-1/2 cups semi-sweet chocolate chips

Directions
1. Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds)
2. Beat in the egg and the vanilla extract for another 30 seconds.
3. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.
4. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.

Yield: 2 dozen cookies

always gather ALL the ingredients first...and all the utensils and cookware out. also, i like to light a candle sometimes...just for the ambiance (cooking should be sexy and sensual)

blending the oatmeal with my bootleg magic bullet (don't buy bella cucina brand, it sounds fancy but it broke after 1 month)

mixing the sugars and the butta'
mixing with my bare hands! (i didn't wash my hands...here's a secret ::slash:: tip, chefs never wash their hands...it just taste better that way!)

who doesn't like chocolate? GO TO HELL!

ccokie dough anyone?

don't be stingy with your portions!!! this is not ANGRY chef...this is MIDNIGHT CHEF! bake, let cool for 5 seconds, then BEAST AWAY! or send them to friends via mail. but remember, we didn't use any preservatives so ship them away NOW!

until then! GOBBLE GOBBLE cookie monsters,

Midnight Chef
